The Borlengo is a dish whose origins are lost in history and traditions of a rather restricted area of the Modena Apennines .
Simple recipe made of a few basic elements, but elaborate and spectacular in its preparation .
The Borlengo is obtained by boiling a liquid glue ( made with water, flour, eggs and salt) in a special pan called the sun or ruola .
Once cooked Borlengo has the consistency of a very thin and friable and is seasoned with cunza ( a pesto bacon, lard, garlic and rosemary) , a generous sprinkling of Parmigiano Reggiano cheese and then folded into quarters and served to be eaten still very hot .
A Guiglia , in May, is held for more than 40 years, the Festival of Borlengo , to nurture and pass on the culture of borlengo , a real gastronomic celebration Borlengo , the ancient indigenous local flavor .
