The name Bitto is traced back to the Celtic bitu, which means everlasting. This cheese can be produced only during the summer season, in the high altitude pastures, because its characteristics depend on the quality of the herbs consumed by cows, which vary from pasture to pasture. Origins and production area
In the dialect of the Val Brembana I dialed the mut means cheese of the mountain or of the alps. Features and production phases
Milk, it takes about 10 liters to produce a kilo of cheese, is processed immediately after milking in the morning and evening. The maturation takes at least 40-45 days for the cheese to be eaten fresh, but can also substantially exceed six months.
The places are used, in addition to the traditional alpine huts, suitable housing in the valley also characterized by specific conditions of temperature and humidity. Slight differences in the processing technique are present in the Formai mut product during the winter from small local dairies. In this case part of the milk is in fact used after a partial skimming and the salting takes place in brine.
The forms of I dialed the mut are cylindrical (30-40 cm in diameter) and weigh from 8 to 12 kg. The crust is thin, pale yellow in young cheeses and grayish in seasoned ones. The paste is ivory compact, elastic with a widespread holes in bird's eye. The flavor is delicate and preserves the fragrance of mountain herbs that give it a distinctive aroma.

Parco Nazionale dello Stelvio: ha una superficie di 134.620 ettari e si estende su quattro province: Sondrio, Brescia, Trento e Bolzano. Il settore lombardo e', per superficie, il maggiore del Parco. Il Parco dello Stelvio comprende l'intero massiccio montuoso dell'Ortles-Cevedale con le sue vallate laterali e si unisce al Parco Nazionale Svizzero dell'Engadina attraverso l'Alta Valle dell'Adda ed il Lago di Livigno. Il parco e' stato istituito nel 1935 e ampliato nel 1977 allo scopo di proteggere e conservare l'ambiente alpino. Tirano e' celebre per il Santuario della Beata Vergine, eretto sul luogo dove ci fu un'apparizione della Madonna nel 1504. Il Santuario a tre navate a croce latina e' il piu bell'esempio del Rinascimento in Valtellina.
